These tender, delicious date muffins are made with a hint of orange extract, but you may use vanilla extract instead if you prefer. But whether you use orange or vanilla, these muffins are a delightful way to start the day, or a perfect treat to enjoy with tea or coffee.

Ingredients

  • 1 cup milk

  • 1 large egg, beaten

  • 1 teaspoon orange, or pure vanilla extract

  • 2 cups all-purpose flour

  • 1/2 teaspoon salt

  • 1 tablespoon baking powder

  • 2/3 cup sugar

  • 1/2 cup coarsely chopped walnuts

  • 1 cup coarsely chopped dates

  • 5 tablespoons unsalted butter, melted

  2. Preheat oven to 400 F. Mix milk and egg together in a mixing bowl; add orange or vanilla extract.

  3. Sift together the dry ingredients over a medium bowl: flour, salt, baking powder, and sugar.

  4. Add to the milk and egg mixture. Mix until well moistened.

  5. Fold in walnuts and dates, then the melted butter, mixing just enough to blend.
