Okay, this is why I choose beets with skinny little tails, and it's also why I salt the beets before roasting them. These little beet crisps, though they might not be much to look at, are absolutely delicious. Crispy, salty, beety, they're almost as good as the roasted beets themselves.
Trim off the beet crisps and eat them. Then trim off what's left of the stalks and discard them. Next, we're going to peel the beets.
