Add A Drop or Two of Vinegar or Lemon Juice

The acid in the vinegar or lemon juice will help make your emulsion more stable. What happens is, the acid lets the egg yolks absorb more fat. Which means it's that much easier to make the mayonnaise. Keep whisking as you add a couple of drops of plain white wine vinegar or lemon juice. Next page >>
