Mustard Vinaigrette Recipe

This mustard vinaigrette recipe is one of the simplest variations on the basic vinaigrette formula and a delicious salad dressing in its own right.

  • ¾ cup salad oil (see note)
  • ¼ cup white wine vinegar
  • 1 Tbsp. Dijon mustard
  • Kosher salt and ground white pepper (or freshly ground black pepper)to taste


  1. Combine the mustard and vinegar in a glass or stainless steel bowl and whisk them together briefly.

  2. Place the mustard-vinegar mixture along with the oil and seasonings in a blender and mix for about 10 seconds or until fully combined.

  3. Transfer to a glass bowl and let stand for 30 minutes to let the flavors meld. Give the dressing a good whisk immediately before serving.
Makes 1 cup of dressing.

NOTE: Any oil labeled "vegetable oil" or "salad oil" is fine for this basic recipe. You can also use any light, neutral-flavored oil like safflower, canola or soybean oil.

Better if you use good quality olive oil, Member jmeschino

I have never made a basic vinaigrette dressing using anything but olive oil. I tried making this one using canola oil because it was all I had in the house. The results simply reminded me how much better vinaigrettes are if you use olive oil, even with the sharp bite of the mustard to counteract the almost flavorless canola oil. The other oils do have the advantage of being cheaper, so if you needed to make a large batch of something where the dressing would not be so ""up front"" I think this is fine. Also, if you are on a tight budget this is MUCH better than bottled dressing.
