Herbes de Provence Recipe

Herbes de Provence are a mixture of dried thyme, marjoram, savory and various other herbs, but it's the dried lavender that gives this blend of summer herbs its unexpected magic.

Try this: Take a skinless breast of chicken, coat it in olive oil and sprinkle both sides with Herbes de Provence. Let it marinate for an hour or so, then grill it. That's it.

Realistically, you might not be able to collect all 11 of the ingredients below, but that's all right. Just don't leave out the lavender flowers, or the fennel seeds, or the savory, basil or thyme.

Prep Time: 5 minutes

Ingredients:

  • 4 Tbsp dried thyme
  • 3 Tbsp dried marjoram
  • 3 Tbsp dried summer savory
  • 2 Tbsp dried rosemary
  • 1 Tbsp dried tarragon
  • 1 Tbsp dried basil
  • 1 Tbsp dried fennel seeds
  • 1 tsp dried chervil
  • 1 tsp dried mint
  • 1 tsp dried lavender flowers

Preparation:

Combine all the ingredients. Store in an airtight container.

Makes 1 cup Herbes de Provence
