Baking Soda

Definition: Baking soda is a chemical leavening agent used in baking. When combined with an acid such as buttermilk or lemon juice, it releases carbon dioxide gas, which in turn causes doughs and batters to rise.
Also Known As:
  • Sodium bicarbonate
  • Bicarbonate of soda
  • Sodium bicarb
  • Bicarb soda
Note: Baking soda is not the same as baking powder, and substituting one for the other can spoil a recipe. But you can make your own baking powder using baking soda and cream of tartar.
