Entrecote

Definition: Entrecote is a classic French steak cut from the beef rib.

The word entrecôte in French means "between the ribs." Indeed, the traditional entrecote steak was made of the meat from between specifically the 9th and 11th ribs, thus making the entrecote a very rare and exclusive steak. In most cases today, the entrecote is synonymous with a rib eye steak.

Because it is a tender cut of meat, the entrecote is good for dry-heat cooking methods such as grilling and broiling.
