As is the case in the fields of music or fashion, the culinary world has its share of trends and fads du jour. Last week it was foams. This week it's anything "local." Next week maybe it'll be donuts.

The culinary arts also contend with the constant drumbeat of "science," with headline-grabbing studies showing that eating chicken will kill you, while eating seaweed will make you live forever (and invariably followed by further studies proving that it's really the other way around). But here's a headline you'll never see:

Research Shows Bacon Doesn't Actually Taste Good

Or:

Butter and Cream Not So Yummy, Study Finds

The point is, some things are manifestly true, and we don't need news magazines or scientists or style mavens to tell us about it. The science can come and go, and so can the fads and trends. What doesn't change is what's good. Like a simple corn bread made with eggs, butter and cream. Or better yet, with bacon. While the scientists argue about what's good for you and what isn't, let your taste buds be your guide. Enjoy this basic corn bread recipe. It's why you have taste buds in the first place.
