Here in the Pacific Northwest, chanterelle mushrooms are in season, so right now the farmer's markets are full of them, and they'll be around until whenever the weather gets below freezing.

To speak of seasons as it relates to chanterelles might be somewhat inaccurate, however, because these are wild mushrooms, and like all wild things, they do what they want, when they want. So it's not unheard of for them to show up in the spring or early summer. But they're transient and elusive, so when you see them, grab them.

Chanterelles might be my favorite mushroom. Earthy, woody and fruity, their flavor is really complex, so I like to prepare them as simply as possible. Here's more about cooking chanterelle mushrooms.
