Quinoa (pronounced KEEN-wah) is a South American grain with a nutty flavor and a slight crunch, and it's a perfect ingredient for a cool summer salad. There are three types of quinoa — white, red and black, and each one has its own unique flavor and texture. White quinoa is light and fluffy; red quinoa has a nuttier flavor; and black quinoa has a little extra crunch.
I like to make my quinoa salad using a combo of all three types. You can usually find a quinoa blend, which might be described as tri-color quinoa or rainbow quinoa.
