How to Cook Pork Chops

Pork chops are one of my favorite things to make, but a lot of folks have trouble with them. Generally the problem is that they turn out overcooked which means they're dry and tough and not very tasty.

One of the keys is how thick the pork chops are. Thinner than one inch and they're going to dry out quickly since the pork you buy at the store these days is remarkably lean. Thicker chops will stay juicier. The other key is to give them a blistering hot sear on the stovetop and then finish them in the oven. Check out How to Cook Pork Chops.
