Cuts of Pork: Boston Butt

Although its name might suggest otherwise, the Boston butt is a pork primal cut taken from the upper shoulder of the hog, including parts of the neck, shoulder blade and upper arm. It's fairly tough and has quite a bit of connective tissue in it. Sometimes it's simply called the pork butt.

Pork butt can be roasted or cut into steaks, but it's also good for braising, as well as for making ground pork or sausages. Read more about the basic pork primal cuts.
