Although its name might suggest otherwise, the Boston butt is a pork primal cut taken from the upper shoulder of the hog, including parts of the neck, shoulder blade and upper arm. It's fairly tough and has quite a bit of connective tissue in it. Sometimes it's simply called the pork butt.
