Sauces for Prime Rib

If you're a roasting a prime rib for your holiday dinner, there are two simple sauces you can make to go with it: A simple au jus sauce, and a creamy, tangy horseradish sauce. They're both easy to make. The horseradish sauce is made with prepared horseradish, sour cream, mustard, fresh herbs and seasonings:

The au jus sauce is made from the pan juices from the prime rib, which are fortified with beef stock and aromatic vegetables, then reduced and strained:
