Swiss Steak Recipe

Oddly enough, or maybe not, Swiss steak has nothing to do with Switzerland. One of the classic braised beef recipes, Swiss steak gets its name from the way the meat is mechanically tenderized before preparing it. The word Swissing refers to the process of putting a bunch of cube-shaped indentations into the meat, either with a machine or a tenderizing mallet. Think cube steak.

Anyway, this recipe for Swiss steak isn't made with cube steak. Instead, I like to use thick slices of beef round or chuck steak. The way it's gently braised is guaranteed to make even the toughest steak tender. Check out this Swiss Steak Recipe.
