Crispy Grilled Polenta

Polenta, a traditional Italian (and southern U.S.) side dish, is made by simmering coarsely ground corn meal until its natural starches are released, and it's fabulously creamy and satisfying. For an added dimension, though, try preparing it on the grill. Grilled polenta develops a wonderful crispy exterior that somehow makes the creamy, buttery interior even more heavenly.

For grilled polenta, we simply prepare a batch of regular polenta, let it cool in a loaf pan, then slice and grill it.
