The Suprême sauce is a finished sauce made by enriching a chicken velouté sauce with a little bit of butter and heavy cream. The Suprême is an ideal accompaniment for sautéed chicken. It's also the base from which classical sauces such as the Mushroom Sauce and the Aurora Sauce are built.
We say that the velouté is not a "finished sauce," but the Suprême is. So what does finished mean? In sauce making, finishing can simply mean seasoning with salt and pepper, or maybe adding a bit of butter or cream.
