How-To Tuesday: How to Make Caramelized Onions

Caramelization is a chemical change that makes carbohydrates (e.g. sugars) turn brown when heated to temperatures of 310°F or higher. The best onions for caramelizing are the so-called "sweet" onion varieties, like Vidalias, Walla Wallas or Mauis.

The first step is to heat some oil or butter in a pan — clarified butter is best, since it won't burn as easily as ordinary butter.

It might take 30 minutes or so, but it's definitely worth it. Here's a simple tutorial that will show you how to make caramelized onions step by step. Your burgers will thank you.
