A couple of thousand years ago, when the Roman poet Virgil wrote that "fortune favors the bold," he was likely thinking of bacon-wrapped pork.
As it turns out, the poet was right — it does require a certain audacity to wrap strips of bacon around marinated medallions of pork tenderloin and then roast them. Pork? Wrapped in bacon? Surely that crosses some sort of line, doesn't it?

This is what we have at my mother’s house for Christmas Eve dinner every year, with asparagus, new potatoes, and salad, followed by chocolate éclairs. Can’t understand why we gain weight every December … worth it though!
A little bit of weight is a good thing. Imagine if we didn’t weigh anything at all. Then where would we be?
